I'm not sure what the differences are between a DialogBar with a form attached and a DockingPane with a form attached. Can someone explain?

Difference only in appearnce and functionality. Also if you choose DialogBar you don't need to delived DockingPanes.ocx but can't use Tabbing/AutoHide features.
