How do you have Icon and Caption in Gallery Controls, as not matter what style I set it only shows icon???

SetStyle(xtpButonIconAndCaption) have to work for gallery. Check if you set some captions for items.

See Samples\Ribbon\RibbonSample\GalleryItems.cpp  file - it shows samples how to override items and draw as you need.

Yeah already coded it that way but wanted to make sure could not do already without overriding the control
