But why can't I overwrite the "text color" after skinning like it is possible with a Label?
Why is the behavior of the "text part" in a Label different from CheckBox/OptionButton.

Hello, Yes it was designed to use colors from theme. If you apply a skin, the ForeColor of CheckBoxes and OptionButtons can't be changed anymore.
The ForeColor of Labels can be changed.
 
I hope this will be possible with the new controls in 11.0.
